Clafouti

Yum Cherry Clafouti. I’ve made blue berry — I want others like pear or apricot or peach. Simple impressive yummy dessert. And you don’t have to be french about it — you can pit your cherries clafoti

There are tons of reciepes out there — mine I picked because it is simple. Before I start — I give a measurement for the cherries, but really, I feel you put as much as reasonably possible in one layer in the pan — I like lots of fruit

3 cups pitted cherries
1/3 cup sugar
2 tbs melted butter ( plus a bit more to grease the pan )
4 large eggs
1 cup whole milk ( I’ve used whatever I had on hand including soy)
1/2 cup flour
1/4 tsp salt
flavoring ( optional) almone or vanilla extract , rum , brandy — whatever you have

Preheat oven to 350
grease a 9 ” deep pie pan ( rebel me – i use a shallower , bigger quiche pan. More cherries) and fill with a layer of cherries
In a blender ( or use your imersion blender ) whir together the sugar, butter, eggs , milk, floor and salt and a splash of optional flavoring.
Pour mixture over cherries.

Bake for 30 to 45 minutes — basically until puffed and golden. ( slightly browned is good )

I’ve done it with blueberries. Lots of other fruits work really well like raspberries or pears. and this is a great dish for fruit that you must use now.

and really, pitting the cherries was the hard part.

Fed it to 7 people today . All gone. Many compliments
